Any recipes to prevent produce waste, using common fruits/veggies?

      I saw somebody posted a recipes for cookies made using only overripe bananas and oats, and I use that recipes every month now.

      I’m seeing if anyone else has any other amazing recipes for produce so that it doesn’t go to waste.

      I live alone, so if I’m the only one eating the produce, sometimes I don’t finish it all before it goes bad.

      I tend to freeze the fruit/veggies or buy things that keep. Most often I have: apples, bananas, cucumbers, carrots, potatoes, onions, grapes, frozen berries (strawberries, blueberries, raspberries), and frozen spinach/brocolli, but I’m open to all suggestions.

        I personally wouldn’t want to freeze cucumbers so I’d focus on eating those fresh. There’s a big thing on tiktok about many variations of fresh cucumber salads so maybe try something like that.

        Some people freeze and put into smoothies.

        Some people freeze potatoes or potato soup but my understanding is it doesn’t thaw well.

        So, I’d eat those fresh too, or you could try dehydrating them.

        I like to make mashed potatoes and then turn it into shepherds pie or potato broccoli soup for the next day.

        Apples you could make apple butter, apple pie filling, apple crisp. All those things store or freeze well.

        Chopped carrots freeze well to add to soups or shepherds pie. Same with chopped onions.

        When I use part of an onion or carrot and don’t want to use the rest or I have onion ends I add them (along with celery) to a freezer bag and then I eventually make veggie or chicken stock in my crockpot.

            I have seen recipes for chocolate cake made with puréed apples & cocoa. Should be an easy google search

              Half cook potatoes and carrots then blanch and freeze for future use.

              Berries and chopped onions freeze nicely.

                When my berries get a bit mushy I slice and freeze them for smoothies later

                  Carrots, potatoes and onions are the base for everything. Soup is easy if you live alone. Apples, maybe stew it and serve.

                  The other items are frozen so keep.

                  I use them in porridge as the defrosted fruits leave the juice which is great in this.

                    I read a post from someone that just makes pesto out of their lettuce if it’s going bad. Seems like a good idea

                      I make apple crisp, just with diced cut up apples, cinnamon and a sprinkle of oats on top.

                      Bake at 350 for 30 min healthy and good way to use the apples

                        When I chop a large onion, I cook with half, and freeze the other half in a zip lock bag to use for the next meal.

                        I do the same with celery.

                        To keep celery fresh, remove the leafy ends, and wrap in foil before refrigerating.
