Can you help me create a weekly list of healthy, comforting meals and groceries?

      Would you all be able to help me put together a list of healthy and affordable meals for the week including their grocery list?

      I am caring for my terminally ill boyfriend and don’t have the time, brainpower, or energy to work on an organized grocery list.

      He is eating primarily comfort foods now and not overly spicy.

      Thank you. Your lists will help me tremendously.

      NOTE: HE likes healthy food, I am not trying to limit his food choices at this point.

      I ABSOLUTELY will feed him anything he wants! Even at the end-stages of life, people cling to the things that have been important to them in life.

      HE was always a very conscientious eater.

      He is not on hospice yet, but we are getting close.

        I wouldn’t be overly concerned with the nutrition piece. If he wants comfort foods stick with that.

        Here are a few suggestions.

        If you want actual recipes I can provide but you may not need one for most.

        Serve with whatever fruit or veg he likes.

        Baked macaroni and cheese

        Chicken pot pie

        Pot roast (slow cooker is great for this one)

        Pancakes and sausages

        Lasagna or other pasta bake

        Grilled ham and cheese

        Copycat kfc bowls

          Chipotle salsa

          Ground beef

          3 green peppers

          Black beans

          Frozen corn

          Scallions

          Egg noodles

          2 onions

          3 carrots

          3 celery

          1 pound chicken

          6 cups chicken broth

          Parsley

          Thyme

          8 oz tomatoes

          Breaded shrimp

          Tortillas

          Southwest salad mix

          Salmon

          Sweet potato

          Green beans

          Chicken thighs

          BBQ sauce

          Salad mix

          Applesauce

          Chicken breast

          Onions
          Sour cream

            I’m not trying to be a jerk but maybe throw the healthy part out the window?

            Just make what he wants and what he can/will eat in addition to making it just a wee bit easier on yourself.

              baked potatoes…you can put them in the crockpot, and top with some butter and shredded cheese.

              There are many kinds of toppings you can do, like drained canned tuna mixed with a little mayo, and can even mix in a drained can of corn.

              Another topping I like to do is a can of baked beans.

              Another topping could be pulled pork, or chili and sour cream.

              Another meal…can make chili con carne and rice…I pad out the ground beef with a few drained cans of kidney beans, or a can of kidney beans in chili sauce.

              Another meal…spaghetti noodles, a jar of sauce, and shredded cheese.

              Can get meatballs or mix some browned ground beef into the tomato sauce too.

              Or else I get a bag of frozen grilled chicken and warm it up with a jar of alfredo sauce, and get a box of cheap garlic bread sticks.

                Meatball heroes are inexpensive, I like to get those cooked chickens from BJ’s and put them in the freezer.

                That’s why I always have them. You can put them in the microwave for 12 minutes and they’re defrosted.

                You can make so much with that chicken meat and when you’re done with the bones be used for soup.

                It’s all pre-cooked so chicken salad chicken sandwiches chicken with some gravy and mashed potatoes chicken Parmesan.

                Just throw some jarred sauce and a little bit of cheese on it. Chicken and rice with some peas mixed in.

                You can add some shredded chicken to just a salad with ranch dressing or any other kind of dressing you like.

                My favorite is to get some Pillsbury rolls, but you have to cook in the oven and put them in acupcake tin put some frozen peas or fresh peas, and carrots.

                If you’d like little bit of chicken, some cream of chicken soup and make chicken pot pies those are delicious.

                I get some cold, cut turkey put some stuffing and some gravy on a roll and make a sandwich

                  Could someone set up a Meal train? I’d ask church or friends and family or coworkers to help! People are always willing to help and it would be one thing off your plate! Even if it’s one or two nights a week!

                    Frankly, if he is terminally ill, let him eat what he enjoys. The simpler the better.

                    Comfort foods are absolutely fine.

                      My easy meal is a crockpot one. It’s a whole chicken with vegetables.
                      You will need.

                      1 whole roaster chicken

                      Baby potatoes

                      Carrots

                      And any other veggies you desire, celery, onions, mushrooms etc

                      Place all vegetables in the bottom of the crockpot.

                      Season your chicken with your choice of seasoning.

                      I use paprika, lemon pepper, garlic and an onion soup mix package.

                      Season inside the chicken cavity and outside.

                      Cover and cook 5-6 until cooked through and juices run clear.

                        Chicken thighs bbq with salad and applesauce

                        Roasted chicken noodle soup

                        Shrimp tacos made from air fried breaded shrimp and bag of southwest salad mix

                        Chicken fajitas on sheet pan cut up veggies and chicken

                        cook on sheet pan at 400 20-30 minutes

                        Chipotle beef and bean shepherds pie

                        I use canned sweet potatoes

                            I bought a package of chicken thighs, eight in the package for $7.64.

                            I baked them for the main course one evening.

                            We ate three. The next night I made chicken spaghetti using a couple of the thighs.

                            I ate one piece of chicken for lunch the next day, my husband had left over chicken spaghetti.

                            The next day I had chicken spaghetti for lunch.

                            Then for supper I made chicken and dressing (my husband’s favorite comfort food).

                            We ate on this for supper and lunches the next day.

                            So, to sum it up, we had eleven meals between us using that one package of chicken!

                              I had stage 4 hodgkins as a kid I remember ice cream was my favorite it was cooling down my throat and helped, hard candy was good to.

                              Feed him everything he wants. Sorry about this your both in my prayers
