I have a dinner dilemma and need your culinary creativity! With 7 hens, we have an abundance of eggs and I’m looking for a fresh, exciting recipe that incorporates them. I have several packets of taco seasoning and would love to use those as well. I’m tired of the usual fried, scrambled, or hard-boiled eggs.
Any ideas on how to turn these ingredients into a delicious dinner while shopping from our pantry?
Your suggestions would be greatly appreciated!

StephanieWe also love steamed eggs, and it’s not something most people eat, but I love them. Taco Seasoned Steamed Eggs
Ingredients:
4 eggs
1 tablespoon taco seasoning
1/4 cup water or milkInstructions:
In a bowl, whisk together eggs, taco seasoning, and water or milk.Pour the mixture into a heatproof dish that fits into a steamer.
Bring water to a boil in a steamer pot.
Place the dish in the steamer and cover. Steam for about 10-15 minutes or until the eggs are set.
If you have hot sauce, that would be good on top when you eat it.
You can also just put it in a water bath in the oven. But make sure that whatever you’re cooking. The eggs in has a lid to prevent steam from getting in.

Hard boiled eggs for grain salads (quinoa, farro, millet, etc)
Mexican casserole? Thinking on the fly but maybe mix an egg with rice and appropriate amount of water with the taco seasoning, top with cheese and shredded chicken?
Add egg to cheese sauce (and cook) for thicker consistency. Add seasoning.
Other ideas, muffins, cookies, pancakes, waffles, baked oatmeal, etc. add to oatmeal for more bulk.

LisaMake quiche. Save the taco seasoning for another day.
AnnieDo a chicken/pork/beef/veggie/anything fried rice. Will use up a few eggs and the taco seasoning will taste good in it.
StephanieI love egg drop soup, so why not Taco Seasoned Egg Drop Soup? Here’s my adapted recipe.
Ingredients:
4 cups chicken broth
4 eggs, beaten
1 tablespoon (ish depending on salt level) of taco seasoning
1 tablespoon cornstarch (optional for thickening)
1/4 cup water (if using cornstarch)
Chopped green onions or cilantro for garnish (optional)Instructions:
Bring the chicken broth to a boil in a pot.
Mix cornstarch with water to create a slurry and stir into the boiling broth to thicken.
Reduce the heat to a simmer and add the taco seasoning.
Slowly pour the beaten eggs into the broth while stirring gently to create ribbons of cooked egg.
Serve hot, garnished with green onions or cilantro if desired.LisaAnother cheap and delish dish is eggroll in a bowl. Shredded cabbage and onion, garlic powder-or jarred or fresh, sauté a bit til the cabbage softens, drop in scrambled eggs and cook til the eggs are done. Top with sesame oil and everything bagel seasoning. So good and lasts for several days! You can add burger or ground pork and other veggies too if you have it.
StacyUse muffin tins and scramble eggs in a bowl add anything you like beef and taco seasoning bake them up in little breakfast muffins.
