I have potluck in a few weeks and need to make a main dish for 15 people.

      I need ideas please.

Something quick and easy. I’m not home a lot.

I’m looking for suggestions on main dishes that are both quick to prepare and easy to serve for a crowd of about 15 people at an upcoming potluck.

Ideally, the dish should be something that can be made in advance or doesn’t require too much time to put together on the day of the event.

It should also be something that travels well and can be easily reheated or served at room temperature.

Bonus points if it’s something that’s universally liked or can accommodate various dietary preferences!

I’d love to hear your favorite go-to recipes or ideas for this kind of gathering.

Honestly a good macaroni salad is always popular. Macaroni, Helmans, diced sweet onion, diced cucumber, halved cherry tomatoes, some hard boiled egg.

Add a little Dijon if you like.

Baked ziti. It’s good with or without meat. It can even be assembled ahead of time and refrigerated.

Then just bake it before you go.

Easy 4 ingredient Crockpot Chicken Marinara served over penne or bowtie pasta (a substantial pasta with grooves to hold the chunky saunce).

4 hours on high in crockpot, shred the chicken and another hour on low!.

                  Double or triple this recipe:
                  RITZ CHICKEN CASSEROLE Ingredients

10.5 ounce can condensed cream of chicken with herbs soup

                  1 cup sour cream

                  ½ cup sliced green onion

3 cups cooked and shredded chicken (I used a family size rotisserie chicken)

                  2 sleeves Ritz crackers, crushed

½ cup (1 stick) salted butter, melted

                  Instructions

Preheat oven to 350F degrees. Spray a 2.5 quart baking dish (or a 9×9 square baking dish) with non-stick cooking spray.

In a large bowl, mix together 10.5 ounce can condensed cream of chicken with herbs soup, 1 cup sour cream and ½ cup sliced green onion.

Then stir in 3 cups cooked and shredded chicken.

Spread mixture into the prepared dish.

In that same bowl, combine 2 sleeves Ritz crackers, crushed with 1/2 cup (1 stick) salted butter, melted.

Sprinkle the cracker mixture over the casserole.

Bake for about 25-30 minutes until the cracker topping is golden

brown and the casserole is bubbly

Caesar salad with chicken. You can either buy a Rotisserie Chicken and cut it up or buy a large can of Canned Chicken.

Buy Prepackaged Salad a bit more expensive and you’ll need about 3 bags and salad dressing but quick and easy.

Egg roll in a bowl / the finely shredded cabbage makes for great filler.

So, it will make a lot.

I use ground beef , with scallions, grated carrots, soy sauce, garlic, sesame oil, & sesame seeds.

I have even used varied peppers.

And I will cut strips of won ton wrappers and fry them up & they can add them for some crunch.

                      For 15 people.

                      2 heads of cabbage.

                      Would be plenty.

Chicken parm bites. Use crock pot, popcorn chicken, mozzarella and sauce.

I copied/pasted the local Kroger ad link in ChatGPT and asked for entree to feed 30 people for $20 or less for my local Celebrate Recovery meal.

I got many recipes with prices of each item, as well as, what aisle the ingredients were on:)

I but little red potatoes, cut in half, place on baking sheet with aluminum foil, pour olive oil and make sure all potatoes get the oil, then sprinkle with Italian seasoning and roast for 25 minutes while your getting ready.

Place in container with a lid and discard foil for easy clean up too.

I made chimichurri sauce for people to pour on if the like but you don’t have to do it.

                              Everyone always makes pasta salad.

                              Something different.

Could also roast all kinds of veggies and bring for something healthier.
