Hi everyone! I have over a gallon of 2% milk that’s about to expire in a day or two. I’d love to hear your best recipes or ideas to use as much of it as possible. Whether it’s for breakfast, lunch, dinner, or dessert, I’m open to all suggestions.

Any tips for freezing or storing would also be appreciated.

Best before date doesn’t mean it will go bad that morning. It will be good for another 2 weeks or more.

I made cheese (queso fresco) with cheese like that. Just milk, vinegar, salt! I watched a TikTok and was successful first time.

If it had not been opened good at least week past date. That is a sell by date not milk turns sour date.

make a whole bunch of instant pudding/pies (gluten free, of course). I think it takes 2cups/instant pudding box, plus I know a little 3-year-old who would love some frozen chocolate pudding pops!

Big pot of potato soup! You can freeze it, or share it!

Pancakes use a lot of milk.

If it starts to go bad, make buttermilk biscuits, pancakes/waffles, dumplings, sour milk cake (delicious!), Google other uses.

My milk and other dairy products lasts past the expiration dates now that I keep it in the back of the fridge instead of toward the front. Just something to keep in mind.

Mac and cheese with a roux and freeze some. I use a half gallon for one batch with 2 lbs noodles making two half sheet foil trays. I freeze them unbaked and it’s great to have on hand!

Pancakes waffles and biscuits. Make them freeze for later use.
