      For my fellow vegetarian frugal people: what meat-less meals do you make and what tricks do you use? My grocery bill is out of hand!

      I’m looking for inspiration on how to make budget-friendly, meatless meals that are both healthy and delicious. Whether it’s using pantry staples, seasonal ingredients, or batch cooking, I’d love to hear your favorite go-to recipes.

      Do you have any special tips or strategies that help keep costs low while still making flavorful, nutritious meals?

        Veggies, rice, potatoes, beans, lentils, etc. Healthy and usually less expensive.

          Let me mention omelets and quiches also. We use up leftover veggies in these.

            I am not a vegetarian but I do like capresce sandwiches, and also I like morningstar sausage on English muffins for quick, easy breakfast.

              We buy dried beans instead of canned, and that saves a decent bit. Other than that, buying in season produce helps bring down those costs.

              Our usual weekly shopping includes dried chickpeas, black beans, and lentils, various fruits and vegetables, Greek yogurt, cheese, and tofu.

              We keep a good stock of condiments and spices on hand, and we buy rice and quinoa in bulk.

              What things are you buying that are eating up your budget? Do you buy premade products, like Morningstar patties or nuggets?

                Chili with beans, mushrooms, frozen corn, onions, celery, tsp of 100% cocoa, brown sugar, cinnamon stick.

                I make crustless quiche weekly. It freezes well. 4 or 5 eggs, cup of half n half, sautéed mushrooms, carrots, tomatoes, cheese, olives, garlic. Bake 20 -25 mins

                Stir fry tofu, peas, mushrooms, garlic, ginger with rice.

                Love the taste of toasted sesame oil

                  Tacos, enchiladas, spaghetti, nachos, roasted vegetables with sun dried tomatoes and chopped spinach or roasted root vegetables, falafel, potato soup, vegetable soup, garlic green beans with soy curls….

                    Black bean burritos. Black bean, rice and shredded zucchini enchiladas. Hearty veggie soup. veggie stir fry.

                    Veggie fried rice. red beans and rice.

                    We’re not vegetarian, but do eat meatless several days a week for health reasons.
