hoping for some ideas… I have chicken breast and a whole lot of diced tomatoes. Share with me with your creative dinner ideas that I might not find on Google. I’d be grateful!
I’m trying to come up with new and exciting dinner recipes that use two ingredients I always have on hand: chicken breast and diced tomatoes. I’d love to hear some of your creative ideas!
Whether it’s a quick and easy weekday meal or something more elaborate, I’m open to all suggestions.
I enjoy experimenting with different spices, herbs, and vegetables, so feel free to suggest any combinations or cooking techniques (baking, grilling, slow-cooking, etc.).
Bonus points if it’s healthy or has a unique twist!

AlejandraI would make peanut butter stew. It’s sooo freaking good and easy to make.
MarthaOlive oil, tomatoes, basil, garlic, salt. Add bow tie pasta and chicken.

Slice the tomatoesCook in the chicken in garlic gravy. If you want, you can boil some potatoes. Put the chicken in the tomatoes mixture.
Add seasoning whatever you like.
I like oregano along with the garlic and serve with the potatoes.
KymI’d make chicken tacos with tomatoes and fresh salsa with more tomatoes
MariaI enjoy cooking chicken in a skillet with tomato, onions peppers and garlic (salt and pepper).
Cook the onions and peppers in some butter (salt and pepper), add garlic minced until just aromatic, then add the diced tomatoes with juices along with herbs of choice (I like some oregano, a bayleaf, and maybe some smoky paprika).
Then I add the chicken breast… immerse it in the sauce (like braising).
Once it starts to boil, bring down to a simmer and cook until chicken is fork tender. Lid it and don’t forget to check on it.
Once cooked, I like to shred the chicken in the sauce and serve with zuchinni noodles.
You can add a little water if the veg doesn’t release a enough fluid for a sauce.
Also, if you have tomato paste, you can add a little to the pan before the garlic.
Let it cook a bit for more flavor.
